ABOUT THE SPEAKER
Heribert Watzke - Food scientist
Heribert Watzke studies the brain in our gut -- and works to develop new kinds of food that will satisfy our bodies and minds.

Why you should listen

Heribert Watzke set up the department of food material science at Nestlé in Switzerland, pulling together many disciplines, including chemistry, nutrition and neuroscience, in pursuit of ever better foods. Watzke's background is in chemistry -- in the mid-'80s, he was part of a groundbreaking team at Syracuse working on splitting water into hydrogen and oxygen to create alternative energy -- before moving to materials science.

At Nestlé's lab, Watzke focuses on the most basic form of human energy: the chemistry of food. Research on food has previously focused on its sensory qualities -- taste, aroma, texture. But there is much more to know. How does food's biological structure determine its quality, its digestibility, its nutritional qualities? What's the science of turning a biological structure (for instance, a kernel of grain) into something humans can make into pure energy (for instance, a slice of bread)? His team has been looking recently at the impact of food structure on fat digestion, in support of the fight against obesity. How much fat is needed to feel full? And how can we most effectively communicate with the 100 million neurons in our gut?

01:44
We carry携带 in our face面对 the proof证明
35

01:47
that cooking烹饪,
36

2000
01:49

01:52
made制作 us what we are.
38

01:54
So I would suggest建议 that we change更改 how we classify分类 ourselves我们自己.
39
99000
3000
01:57
We talk about ourselves我们自己 as omnivores杂食动物.
40
102000
3000
02:00
I would say, we should call ourselves我们自己 coctivorscoctivors --
41
105000
3000
02:03
(Laughter
42
108000
2000
02:05
from coquerecoquere, to cook厨师.
43
110000
3000
02:08
We are the animals动物

45
115000
3000
02:13
No, no, no, no. Better --
46
118000
2000
02:15
to live生活 of cooked food餐饮.
47
120000
2000
02:17
So cooking烹饪 is a very important重要 technology技术.
48
122000
2000
02:19
It's technology技术.
49
124000
2000
02:21
I don't know how you feel,
50
126000
2000
02:23
but I like to cook厨师 for entertainment娱乐.
51
128000
2000
02:25
And you need some design设计
52
130000
2000
02:27
to be successful成功.
53
132000
2000
02:29
So, cooking烹饪 is a very important重要 technology技术,
54
134000
3000
02:32
because it allowed允许 us to acquire获得
55
137000
3000
02:35
what brought you all here:
56
140000
3000
02:38
the big brain,
57
143000
2000
02:40
this wonderful精彩 cerebral颅内 cortex皮质 we have.
58
145000
3000
02:43
Because brains大脑 are expensive昂贵.
59
148000
3000
02:46
Those have to pay工资 tuition学费 fees费用 know.
60
151000
3000
02:49
(Laughter
61
154000
2000
02:51
But it's also, metabolically代谢 speaking请讲, expensive昂贵.
62
156000
3000
02:55
You now, our brain is two to three percent百分 of the body身体 mass,
63
160000
3000
02:58
but actually其实 it uses使用 25 percent百分 of the total energy能源 we use.
64
163000
3000
03:01
It's very expensive
65
166000
2000
03:03
Where does the energy能源 come from. Of course课程, from food餐饮.
66
168000
3000
03:06
If we eat raw生的 food餐饮,
67
171000
2000
03:08
we cannot不能 release发布 really the energy能源.
68
173000
3000
03:12
So this ingenuity创造力 of our ancestors祖先,
69
177000
3000
03:15
to invent发明 this most marvelous奇妙 technology技术.
70
180000
3000
03:18
Invisible无形 -- everyone大家 of us does it every一切 day, so to speak说话.
71
183000
4000
03:22
Cooking烹饪 made制作 it possible可能
72
187000
2000
03:24
that mutations突变,
73
189000
2000
突变,
03:26
natural自然 selections, our environment环境,
74
191000
2000
03:28
could develop发展 us.
75
193000
3000
03:32
So if we think about
76
197000
2000
03:34
this unleashing肆行 human人的 potential潜在,
77
199000
3000
03:37
which哪一个 was possible可能 by cooking烹饪 and food餐饮,
78
202000
3000
03:40
why do we talk so badly about food餐饮?
79
205000
3000
03:43
Why is it always do and don'ts
03:45
and it's good for you, it's not good for you?
81
210000
2000
03:47
I think the good news新闻 for me
82
212000
2000
03:49
would be if we could go back
83
214000
3000
03:52
and talk about the unleashing肆行,
84
217000
2000
03:54
the continuation延续 of the unleashing肆行 of human人的 potential潜在.
85
219000
3000
03:57
Now, cooking烹饪 allowed允许 also
86
222000
2000
03:59
that we became成为 a migrant农民 species种类.
87
224000
3000
04:02
We walked out of Africa非洲 two times.
88
227000
3000
04:05
We populated人口稠密 all the ecologies生态.
89
230000
2000
04:07
If you can cook厨师, nothing can happen发生 to you,
90
232000
3000
04:10
because whatever随你 you find,
91
235000
2000
04:12
you will try to transform转变 it.
92
237000
2000
04:14
It keeps保持 also your brain working加工.
93
239000
3000
04:17
Now the very easy简单 and simple简单 technology技术
94
242000
4000
04:21
which哪一个 was developed发达
95
246000
2000
04:23
actually其实 runs运行 after this formula.
96
248000
2000
04:25
Take something which哪一个 looks容貌 like food餐饮, transform转变 it,
97
250000
3000
04:28
and it gives you a good, very easy简单, accessible无障碍 energy能源.
98
253000
3000
04:31
This technology技术 affected受影响 two organs器官,
99
256000
3000
04:34
the brain and the gut肠道, which哪一个 it actually其实 affected受影响.
100
259000
3000
04:37
The brain could grow增长, but the gut肠道 actually其实 shrunk压缩.
101
262000
3000
04:40
Okay, it's not obvious明显 to be honest诚实.
102
265000
2000
04:42
(Laughter
103
267000
3000
04:45
But it shrunk压缩 to 60 percent百分
104
270000
2000
04:49
of my body身体 mass.
106
274000
2000
04:51
So because of having cooked food
107
276000
3000
04:54
it's easier更轻松 to digest消化.
108
279000
3000
04:57
Now having a large brain, as you know,
109
282000
3000
05:00
is a big advantage优点,
110
285000
2000
05:02
because you can actually其实 influence影响 your environment环境.
111
287000
3000
05:05
You can influence影响 your own拥有 technologies技术 you have invented发明.
112
290000
2000
05:07
You can continue继续 to innovate创新 and invent发明.
113
292000
2000
05:09
Now the big brain did this also with cooking
114
294000
3000
05:12
But how did it actually其实 run this show显示?
115
297000
3000
05:15
How did it actually其实 interfere干扰?
116
300000
2000
05:17
What kind of criteria标准 did it use?
117
302000
3000
05:20
And this is actually其实 taste味道 reward奖励 and energy能源.
118
305000
4000
05:24
You know we have up to five tastes口味,
119
309000
2000
05:26
three of them sustain支持 us.
120
311000
3000
05:29
Sweet -- energy能源.
121
314000
2000
05:31
Umami鲜味 -- this is a meaty肉香 taste味道.
122
316000
2000
05:33
You need proteins蛋白质 for muscles肌肉, recovery复苏.
123
318000
3000
05:37
Salty,
124
322000
2000
咸,
05:39
because you need salt, otherwise除此以外 your electric电动 body身体 will not work.
125
324000
3000
05:42
And two tastes口味 which哪一个 protect保护 you --
126
327000
3000
05:45
bitter and sour,
127
330000
2000
05:47
which哪一个 are against反对
128
332000
3000
05:50
poisonous有毒 and rotten material材料.
129
335000
3000
05:53
But of course课程, they are hard-wired硬连线
130
338000
2000
05:55
but we use them still in a sophisticated复杂的 way.
131
340000
2000
05:57
Think about bittersweet苦乐参半 chocolate巧克力;
132
342000
2000
05:59
or think about the acidity酸度
133
344000
2000
06:01
of yogurt酸奶 -- wonderful精彩 --
134
346000
2000
06:03
mixed with strawberry草莓 fruits水果.
135
348000
2000
06:05
So we can make mixtures混合物 of all this kind of thing
136
350000
3000
06:08
because we know
137
353000
3000
06:11
that, in cooking烹饪, we can transform转变 it
138
356000
2000
06:13
to the form形成.
139
358000
2000
成形。
06:15
Reward奖励: this is a more complex复杂
140
360000
3000
06:18
and especially特别 integrative综合
141
363000
3000
06:21
form形成 of our brain
142
366000
2000
06:23
with various各个 different不同 elements分子 --
143
368000
3000
06:26
the external外部 states状态, our internal内部 states状态,
144
371000
2000
06:28
how do we feel, and so on are put together一起.
145
373000
3000
06:31
And something which哪一个 maybe you don't like
146
376000
2000
06:33
but you are so hungry饥饿 that you really will be satisfied满意 to eat.
147
378000
3000
06:36
So satisfaction满意 was a very important重要 part部分.
148
381000
3000
06:39
And as I say, energy能源 was necessary必要.
149
384000
2000
06:41
Now how did the gut肠道 actually其实
150
386000
2000
06:43
participate参加 in this development发展?
151
388000
3000
06:46
And the gut肠道 is a silent无声 voice语音 --
152
391000
3000
06:49
it's going more for feelings情怀.
153
394000
2000
06:51
I use the euphemism婉辞 digestive消化 comfort安慰 --
154
396000
3000
06:55
actually其实 -- it's a digestive消化 discomfort不舒服,
155
400000
3000
06:58
which哪一个 the gut肠道 is concerned关心 with.
156
403000
3000
07:01
If you get a stomach ache疼痛, if you get a little bit bloated,
157
406000
3000
07:04
was not the right food餐饮, was not the right cooking烹饪 manipulation操作
158
409000
3000
07:07
or maybe other things went wrong错误.
159
412000
2000
07:09
So my story故事 is a tale故事 of two brains大脑,
160
414000
3000
07:12
because it might威力 surprise you,
161
417000
2000
07:14
our gut肠道 has a full-fledged羽翼丰满 brain.
162
419000
3000
07:17
All the managers经理 in the room房间 say,
163
422000
2000
07:19
"You don't tell me something new, because we know, gut肠道 feeling感觉.
164
424000
2000
“你不用说这是什么新东西,因为我们知道,肚子里有数。
07:21
This is what we are using运用."
165
426000
2000
07:23
(Laughter
166
428000
2000
07:25
And actually其实 you use it and it's actually其实 useful有用.
167
430000
2000
07:27
Because our gut肠道 is connected连接的 to our emotional情绪化 limbic边缘 system系统,
168
432000
3000
07:30
they do speak说话 with each other
169
435000
2000
07:32
and make decisions决定.
170
437000
2000
07:35
But what it means手段
171
440000
2000
07:37
to have a brain there
172
442000
2000
07:39
is that, not only the big brain
173
444000
3000
07:42
has to talk with the food餐饮,
174
447000
3000
07:45
the food餐饮 has to talk with the brain,
175
450000
3000
07:48
because we have to learn学习 actually其实
176
453000
3000
07:51
how to talk to the brains大脑.
177
456000
2000
07:53
Now if there's a gut肠道 brain,
178
458000
2000
07:55
we should also learn学习 to talk with this brain.
179
460000
2000
07:57
Now 150 years年份 ago,
180
462000
2000
07:59
anatomists解剖学家 described描述 very, very carefully小心 --
181
464000
3000
08:02
here is a model模型 of a wall of a gut肠道.
182
467000
3000
08:05
I took the three elements
183
470000
2000
08:07
stomach, small intestine and colon结肠.
184
472000
3000
08:10
And within this structure
185
475000
2000
08:12
you see these two pinkish粉红色 layers,
186
477000
2000
08:14
which哪一个 are actually其实 the muscle肌肉.
187
479000
2000
08:16
And between之间 this muscle肌肉, they found发现 nervous紧张 tissues组织,
188
481000
2000
08:18
a lot of nervous紧张 tissues组织,
189
483000
2000
08:20
which哪一个 penetrate穿透 actually其实 the muscle肌肉 --
190
485000
2000
08:24
where you have all the elements分子 for the immune免疫的 system系统.
192
489000
2000
08:26
The gut肠道 is actually其实 the largest最大 immune免疫的 system系统,
193
491000
2000
08:28
defending卫冕 your body身体.
194
493000
2000
08:30
It penetrates渗透 the mucosa粘膜.
195
495000
2000
08:32
This is the layer which哪一个 actually其实 touches触摸 the food餐饮 you are swallowing吞咽
196
497000
3000
08:35
and you digest消化,
197
500000
2000
08:37
which哪一个 is actually其实 the lumen流明.
198
502000
2000
08:39
Now if you think about the gut
199
504000
2000
08:41
the gut肠道 is -- if you could stretch伸展 it --
200
506000
2000
08:43
40 meters long,
201
508000
2000
08:45
the length长度 of a tennis网球 court法庭.
202
510000
2000
08:47
If we could unroll it,
203
512000
2000
08:49
get out all the folds褶皱 and so on,
204
514000
3000
08:52
it would have 400 sq平方. meters of surface表面.
205
517000
3000
08:55
And now this brain takes care关心 over this,
206
520000
3000
08:58
to move移动 it with the muscles肌肉 and to do defend保卫 the surface表面
207
523000
3000
09:01
and, of course课程, digest消化 our food餐饮 we cook厨师.
208
526000
3000
09:04
So if we give you a specification规范,
209
529000
3000
09:07
this brain, which哪一个 is autonomous自主性,
210
532000
2000
09:09
have 500 million百万 nerve神经 cells细胞,
211
534000
2000
09:13
so around the size尺寸 of a cat brain,
213
538000
3000
09:16
so there sleeps睡觉 a little cat --
214
541000
3000
09:19
thinks for itself本身,
215
544000
2000
09:24
It has 20 different不同 neuron神经元 types类型.
217
549000
3000
09:27
It's got the same相同 diversity多样 you find actually其实 in a pig brain,
218
552000
2000
09:29
where you have 100 billion十亿 neurons神经元.
219
554000
3000
09:32
It has autonomous自主性 organized有组织的 microcircuits微电路,
220
557000
3000
09:35
has these programs程式 which哪一个 run.
221
560000
2000
09:37
It senses感官 the food餐饮; it knows知道 exactly究竟 what to do.
222
562000
3000
09:40
It senses感官 it by chemical化学 means手段
223
565000
2000
09:42
and very importantly重要的 by mechanical机械 means手段,
224
567000
3000
09:45
because it has to move移动 the food餐饮 --
225
570000
2000
09:47
it has to mix混合 all the various各个 elements分子
226
572000
2000
09:49
which哪一个 we need for digestion消化.
227
574000
2000
09:51
This control控制 of muscle肌肉 is very, very important重要,
228
576000
3000
09:54
because, you know, there can be reflexes反射.
229
579000
2000
09:56
If you don't like a food餐饮, especially特别 if you're a child儿童, you gag插科打诨.
230
581000
3000
09:59
It's this brain which哪一个 makes品牌 this reflex反射.
231
584000
2000
10:01
And then finally最后,
232
586000
2000
10:03
it controls控制 also the secretion分泌 of this molecular分子 machinery机械,
233
588000
3000
10:06
which哪一个 actually其实 digests摘要 the food餐饮 we cook厨师.
234
591000
3000
10:09
Now how do the two brains大脑 work with each other?
235
594000
3000
10:12
I took here a model模型 from robotics机器人 --
236
597000
3000
10:15
it's called the Subsumption涵摄 Architecture建筑.
237
600000
3000
10:18
What it means手段 is that we have a layered分层 control控制 system系统.
238
603000
3000
10:21
The lower降低 layer, our gut肠道 brain,
239
606000
2000
10:23
has its own拥有 goals目标 -- digestion消化 defense防御 --
240
608000
3000
10:26
and we have the higher更高 brain
241
611000
2000
10:28
with the goal目标 of integration积分
242
613000
2000
10:30
and generating发电 behaviors行为.
243
615000
2000
10:32
Now both look -- and this is the blue蓝色 arrows箭头 --
244
617000
3000
10:35
both look to the same相同 food餐饮, which哪一个 is in the lumen流明
245
620000
3000
10:38
and in the area of your intestine.
246
623000
2000
10:40
The big brain integrates整合 signals信号,
247
625000
2000
10:42
which哪一个 come from the running赛跑 programs程式
248
627000
2000
10:44
of the lower降低 brain,
249
629000
2000
10:46
But subsumption包容 means手段
250
631000
2000
10:48
that the higher更高 brain can interfere干扰 with the lower降低.
251
633000
3000
10:51
It can replace更换,
252
636000
2000
10:53
or it can inhibit抑制 actually其实, signals信号.
253
638000
3000
10:56
So if we take two types类型 of signals信号 --
254
641000
2000
10:58
a hunger饥饿 signal信号 for example.
255
643000
2000
11:00
If you have an empty stomach,
256
645000
2000
11:02
your stomach produces产生 a hormone激素 called ghrelin生长素.
257
647000
2000
11:04
It's a very big signal信号;
258
649000
2000
11:06
it's sent发送 to the brain says,
259
651000
2000
11:08
"Go and eat."
260
653000
2000
“去吃!”
11:10
You have stop signals
261
655000
2000
11:12
we have up to eight stop signals信号.
262
657000
2000
11:14
At least最小 in my case案件,
263
659000
2000
11:16
they are not listened听了 to.
264
661000
2000
11:18
(Laughter
265
663000
2000
11:20
So what happens发生
266
665000
2000
11:22
if the big brain in the integration积分
267
667000
3000
11:25
overrides覆盖 the signal信号?
268
670000
2000
11:27
So if you override覆盖 the hunger饥饿 signal信号,
269
672000
2000
11:29
you can have a disorder紊乱, which哪一个 is called anorexia厌食症.
270
674000
3000
11:34
a healthy健康 hunger饥饿 signal信号,
272
679000
2000
11:36
the big brain ignores忽略 it
273
681000
2000
11:38
and activates激活 different不同 programs程式 in the gut肠道.
274
683000
3000
11:41
The more usual通常 case案件
275
686000
2000
11:46
It actually其实 takes the signal信号
277
691000
3000
11:49
and changes变化 it,
278
694000
2000
11:51
and we continue继续,
279
696000
2000
11:53
even [though虽然] our eight signals信号 would say, "Stop, enough足够.
280
698000
3000
11:56
We have transferred转入 enough足够 energy能源."
281
701000
2000
11:58
Now the interesting有趣 thing is that,
282
703000
2000
12:00
along沿 this lower降低 layer -- this gut肠道 --
283
705000
2000
12:02
the signal信号 becomes stronger and stronger
284
707000
3000
12:05
if undigested未消化, but digestible易消化, material材料
285
710000
3000
12:08
could penetrate穿透.
286
713000
2000
12:10
This we found发现 from bariatric减肥 surgery手术.
287
715000
3000
12:14
That then the signal信号 would be very, very high.
288
719000
3000
12:17
So now back to the cooking烹饪 question
289
722000
3000
12:20
and back to the design设计.
290
725000
2000
12:22
We have learned学到了 to talk to the big brain --
291
727000
3000
12:25
taste味道 and reward奖励, as you know.
292
730000
2000
12:27
Now what would be the language语言
293
732000
2000
12:29
we have to talk to the gut肠道 brain
294
734000
2000
12:31
that its signals信号 are so strong强大
295
736000
2000
12:33
that the big brain cannot不能 ignore忽视 it?
296
738000
3000
12:36
Then we would generate生成 something
297
741000
2000
12:38
all of us would like to have --
298
743000
2000
12:40
a balance平衡 between之间 the hunger饥饿
299
745000
2000
12:42
and the satiation饱食.
300
747000
3000
12:45
Now I give you, from our research研究, a very short claim要求.
301
750000
3000
12:48
This is fat脂肪 digestion消化.
302
753000
2000
12:50
You have on your left
303
755000
2000
12:52
an olive橄榄 oil droplet水滴,
304
757000
2000
12:54
and this olive橄榄 oil droplet水滴 gets得到 attacked袭击 by enzymes.
305
759000
3000
12:57
This is an in vitro体外 experiment实验.
306
762000
2000
12:59
It's very difficult to work in the intestine.
307
764000
3000
13:02
Now everyone大家 would expect期望
308
767000
2000
13:04
that when the degradation降解 of the oil happens发生,
309
769000
2000
13:06
when the constituents成分 are liberated解放,
310
771000
2000
13:08
they disappear消失, they go away
311
773000
2000
13:10
because they [were] absorbed吸收.
312
775000
2000
13:12
Actually其实, what happens发生 is that a very intricate错综复杂 structure结构体 appears出现.
313
777000
3000
13:15
And I hope希望 you can see
314
780000
2000
13:17
that there are some ring-like环状的 structures结构 in the middle中间 image图片,
315
782000
2000
13:19
which哪一个 is water.
316
784000
2000
13:21
This whole整个 system系统 generates生成 a huge巨大 surface表面
317
786000
3000
13:24
to allow允许 more enzymes
318
789000
2000
13:26
to attack攻击 the remaining其余 oil.
319
791000
2000
13:28
And finally最后, on your right side,
320
793000
2000
13:30
you see a bubbly香槟酒,
321
795000
2000
13:34
from which哪一个 the body身体 will absorb吸收 the fat脂肪.
323
799000
3000
13:38
Now if we could take this language
324
803000
2000
13:40
and this is a language语言 of structures结构 --
325
805000
3000
13:43
and make it longer-lasting寿命更长,
326
808000
3000
13:46
that it can go through通过
327
811000
2000
13:48
the passage通道 of the intestine,
328
813000
3000
13:51
it would generate生成 stronger signals信号.
329
816000
3000
13:55
So our research
330
820000
2000
13:57
and I think the research研究 also at the universities高校 --
331
822000
2000
13:59
are now fixing定影 on these points
332
824000
2000
14:01
to say: how can we actually其实 --
333
826000
2000
14:03
and this might威力 sound声音 trivial不重要的 now to you --
334
828000
2000
14:05
how can we change更改 cooking烹饪?
335
830000
2000
14:07
How can we cook厨师
336
832000
2000
14:09
that we have this language语言 developed发达?
337
834000
3000
14:12
So what we have actually其实, it's not an omnivore's杂食动物的 dilemma困境.
338
837000
3000
14:15
We have a coctivor'scoctivor的 opportunity机会,
339
840000
3000
14:18
because we have learned学到了 over the last two million百万 years年份
340
843000
3000
14:21
which哪一个 taste味道 and reward奖励 --
341
846000
3000
14:26
to please ourselves我们自己, to satisfy满足 ourselves我们自己.
343
851000
2000
14:28
If we add the matrix
344
853000
2000
14:30
if we add the structure结构体 language语言, which哪一个 we have to learn学习,
345
855000
3000
14:33
when we learn学习 it, then we can put it back;
346
858000
2000
14:35
and around energy能源,
347
860000
2000
14:37
we could generate生成 a balance平衡,
348
862000
2000
14:39
which哪一个 comes out
349
864000
2000
14:41
from our really primordial原始 operation手术: cooking烹饪.
350
866000
3000
14:45
So, to make cooking烹饪 really
351
870000
3000
14:48
a very important重要 element元件,
352
873000
2000
14:50
I would say even philosophers哲学家 have to change更改
353
875000
2000
14:52
and have to finally最后 recognize认识
354
877000
2000
14:54
that cooking烹饪 is what made制作 us.
355
879000
3000
14:57
So I would say, coquocoquo ergoERGO sum:
356
882000
3000
15:00
I cook厨师, therefore因此 I am.
357
885000
2000
15:02
Thank you very much.
358
887000
2000
15:04
(Applause
